I have a crazy few days ahead, but I wanted to pop right in and share a quick post with a recipe that is perfect for forth of July – Kombucha Gelatin.
The blueberries at the farmer’s market Saturday were so beautiful I just had to make something that featured their fresh juiciness. With Independence day just around the corner, getting some white (sorta) and red in it too just made sense.
As much as I enjoy cooked fruit desserts, I appreciate how gelatin ones allow the fruit to keep it’s freshness.
With some kombucha flavors, and apple cider drink for just another layer of fruitiness this just screams summer. It would be a great dish to take to a Forth of July desserts.
Ingredients And Substitutions
Kombucha – I make my own homemade kombucha (you can buy kombucha kit) . Of course you can buy bottled kombucha at the store. But as usual, everything made with your own hands turns out to be tastier and healthier. When buying kombucha, pay attention to the labels. In most cases, kombucha is a non-alcoholic drink, the alcohol content in the classic drink is no more than 0.5%. But sometimes it can be different, and kombucha alcohol can reach 5%.
The first time I made kombucha myself was after watching a kombucha Kamp video. I bought a kombucha starter kit that included scoby kombucha. I was very worried about doing everything right. I followed the instructions in the video: brewed the tea, added sugar, cooled it to room temperature and put the kombucha scoby in there along with a little starter liquid. A week later I had my first drink. Since then, I’ve always kept kombucha on hand. If you need step by step kombucha recipe, let me know in comments.
Fruit – blueberries, raspberries and bananas – for recipe you can use any berries and fruit, but this composition is suitable by colors for Fourth of July desserts.
Apple cider – Most often it is a low-alcohol drink obtained by fermenting apple juice. Apple cider cocktail a refreshing fruity taste and usually contains from 2% to 8% alcohol. The term “apple cider” often refers to unfiltered and unpasteurized apple juice with no alcohol content. So if children are going to this eat gelatin dessert, take this into account and use apple juice!
Gelatin – I like to use powdered gelatin for thickening. The main thing to know about gelatin is that it loses its gelling properties when boiled. Gelatin can be replaced with agar agar, but you will need more of it since its gelling properties are slightly weaker.
Honey – I like clover or acacia honey. It is light and has a mild taste and aroma. If you are intolerant to honey, you can always replace it with maple syrup or agave syrup.

How To make Kombucha Gelatin Dessert :
1.Mix together the sweetener, apple cider, and salt. Pour half into a small pot and sprinkle with the gelatin. Let sit until the gelatin is “bloomed” and it let set as you prepare the fruit.
2.In a pie pan, mix together the fruit. To do the circles we started with most of the bananas, pushed them against the side, then poured in most of the blueberries and pushed them against the of bananas making a well for the raspberries, then poured most of the raspberries in.
3.Next I started inward with the raspberries and worked towards the bananas adding more fruit and emphasizing the shape.
4.Once the gelatin has bloomed add the rest of the apple cider and sweetener. Stir and heat over medium-low/low heat until the gelatin is dissolved. You don’t want it to get very hot. Gelatin dissolves at 90 degrees, so not much heat is needed. Make sure it isn’t hot, or set aside to cool before adding the kombucha.
5.Add the kombucha and vanilla. Pour until the pie pan. Adjust the fruit so that all the pieces are touching the liquid. If you have more fruit add in sparse places so that fruit will be sticking out from the gelatin.
6.Refridgerate for 1-2 hours until the gelatin is fully set.
