I don’t know any person who would refuse fresh aromatic banana pancakes in the morning. For me, this is the most homey, warm and cozy food from childhood. Usually, my mother cooked pancakes for breakfast on weekends. You wake up in the morning and feel how the aroma of freshly baked pancakes comes to you under the blanket.
These are those leisurely days that you want to remember again and again. And of course, I want day by day create such days for my family. In this post I will share a very cozy and close to my heart recipe. It is simple and quik, and definitely turn out delicious. The main thing is to know a few secrets.
Ingredients and Substitutions:
Bananas – Choose ripe soft bananas, they make pancakes the most flavorful. Thanks to the natural sweetness, you don’t even have to add sugar.
Eggs – I only buy and use medium sized free range eggs.For this recipe, there is no need to separate the whites and yolks.
Wheat flour – for this recipe I use regular all-purpose flour. It can be replaced with healthier alternatives, but this recipe is classic, just like my mom’s, so the flour will be the most regular one.
Sugar – you can add a little brown or white sugar, but you won’t need it if you have ripe bananas. Sugar can be replaced with honey or maple syrup or agave syrup.
Olive oil – any vegetable oil will work for this recipe, I use regular olive oil which is suitable for cooking at high temperatures or avocado oil.
How to Make Banana Pancakes:
- Peel the banana and mash it with a fork in a mixing bowl.
2. Add eggs to mashed bananas and mix until well combined.
3.In the other mixing bowl combine dry ingredients: flour, baking powder and vanilla extract.
4. Add the flour mixture to the bananas and eggs, pour in the olive oil and mix well until smooth.
5.Preheat the frying pan and put in two tablespoons of dough, without using vegetable oil
6.Cook for 2 minutes on each side. Brush the finished pancakes with butter. Serve with maple syrup, sour cream and your favorite jam.
