Banana Pancakes

I don't know any person who would refuse fresh aromatic pancakes in the morning. For me, this is the most homey, warm and cozy food from childhood. Usually, my mother cooked pancakes for breakfast on weekends. You wake up in the morning and feel how the aroma of freshly baked pancakes comes to you under the blanket.

  • Peel the banana and mash it with a fork in a mixing bowl.
    Mashing ripe bananas with a fork in a bowl.
  • Add eggs to mashed bananas and mix until well combined.

  • In the other mixing bowl combine dry ingredients: flour, baking powder and vanilla extract.

  • Add the flour mixture to the bananas and eggs, pour in the olive oil and mix well until smooth.

  • Preheat the frying pan and put in two tablespoons of dough, without using vegetable oil

  • Cook for 2 minutes on each side. Brush the finished pancakes with butter. Serve with maple syrup, sour cream and your favorite jam
