It is the time of year that you can find these small cabbages on the shelves of almost all supermarkets. Of course, you can always buy frozen Brussels sprouts, but fresh are most delicious and healthy.

There are some nuances in the preparation of these little cabbage heads, and if you know about it, your roasted Brussels sprouts will always be incredible. Honestly, Some times ago my husband didn’t like this healthy vegetable (or I didn’t cook it well enough). Last weekend, our friends invited us to celebrate their anniversary at the casual restaurant Longhorn Steakhouse. Of course, we all enjoyed the steaks, which are simply delicious here, but the Longhorn Brussels Sprouts caused special attention and unexpected delight in our company.

This combination of sweet, salty and spicy flavors was perfect. As a culinary enthusiast and food blogger, I simply could not pass by these crispy roasted brussels sprouts in the oven and wanted to definitely repeat this recipe. Now it is a favorite side dish for porter and ribeye steaks in my family. And of course, I will gladly share it with you.

First time, I experimented and try to understand whether were prepared these roasted brussels sprouts with balsamic glaze? But after a couple of attempts, I realized that it was most likely teriyaki sauce or a mixture of soy sauce with honey or maple syrup. Smoked paprika gave a smoky note and bright color, and on my own, I decided to add red onion and pecans. It turned out absolutely delicious! This recipe will become a decoration and pride of your table.

Longhorn Brussels Sprout Recipe Ingredients And Substitutions:

Brussels sprouts – choose fresh, firm, bright green heads without damage or dark spots. Pay attention to the size, it is god that the cabbage be approximately the same size, then it will be cooked at the same time. If the top leaves are yellow, this may mean that the cabbage has been stored for a long time and is not fresh .

Don’t buy Brusels sprouts that are too small, medium is ideal. Small ones can be too bitter. Before cooking, be sure to boil the cabbage heads in salted water for 2-3 minutes. After boiling, the cabbage loses its bitterness. You can also use frozen Brussels sprouts, but you will need to defrost them first. In my opinion, frozen Brussel sprouts are less crispy than fresh ones after cooking.

Teriyaki sauce – a ready-made Asian sauce that is sold in any supermarket. I really like to use Kikkoman Teriyaki Baste & Glaze sauce for my recipes. If you do not have teriyaki sauce, you can replace it with soy sauce with honey or maple syrup. In this case, choose less salt soy sauce.

Smoked paprika – is a type of paprika that has a unique, smoky flavor due to the smoking process. It is often used in Spanish and Mexican cuisine. Smoked paprika is made from mature red peppers that are first dried and then smoked, usually using wood such as oak. Smoked paprika is not spicy. So if you like hot taste add chilly or hot pepper flakes.

Olive oil – For roasting in the oven I choose oil with a high smoke point, regular olive oil or avocado oil.

Red onion – sweeter and less spicy than regular onions. It is more juicy and retains its color after baking. It goes well with Brusels sprouts and complements their flavor.

Fresh garlic – I like to use purple garlic in my recipes, it is usually more expensive than white but it is definitely worth it. A few cloves add flavor and go very well with soy sauce.

Pecan kernels – Brussel sprouts and pecans are just made for each other, I love this combination. If you don’t have pecans, you can substitute walnuts, but walnuts have a more bitter taste.

Fresh Cilantro – If you don’t like cilantro, replace it with parsley or kerbel, but personally I love cilantro and wouldn’t replace it.

Butter – for serving. Good butter usually contains at least 82% fat, better to choose organic butter without additives and in airtight packaging.

How to cook Longhorn Brussels Sprout?

  1. Rinse the Brussels sprouts under running water, remove the top leaves, trim the edges of the heads.

    Cut large cabbages in half. Make cross-shaped cuts on small ones.

    2. Bring water to a boil, add salt and Brussel sprouts. Cook over low heat for 3 minutes. Drain and set aside. After boiling, the cabbage will lose its bitterness.

    3. Peel and chop the red onion and garlic into large pieces. If the pieces are too thin or small, they will cook faster and may burn.

    4. Mix olive oil with teriyaki sauce or soy sauce and honey mixture. Add smoked paprika. Mix well until all ingredients are well combined.

    5. In a mixing bowl, combine the Brussels sprouts, red onion, garlic, pecans, and oil mixture.

    6. Preheat oven or air fryer to 400F (200C).Cook for 20 minutes, check color after 10 minutes and cover other side once.

    7. Finely chop the cilantro and melt butter in microwave.

    8. Pour crispy roasted brussel sprouts with melted butter and sprinkle with chopped cilantro. You can also add lemon juice to taste. I like to serve roasted brussels sprouts with basmati rice or quinoa, and it’s absolutely delicious side dish for porter steak or Greek lemon chicken thighs.

    This crispy Longhorn Brussels Sprouts is a little spicy, sweet, and crunchy. It can also contain other vegetables, such as sweet potatoes or broccoli, and instead of teriyaki sauce, you can use balsamic cream. I also really like to drizzle baked Brussel sprouts with a mixture of butter and pomegranate sauce. You can cook this delicious and quick dish in the oven or air fryer.
