A couple days ago I saw these colorful mini peppers in a greengrocer and couldn’t resist and bought them right away, they were so cute. I didn’t have a specific plan for them, so I decided to experiment and cook some chicken bites. I usually add peppers to salads, my favorite option is Taco Salad With Creamy Cilantro Dressing.I also like to stuff bell peppers with different fillings. But these cute little ones gave me the idea of something very creamy and at the same time spicy. There were some leftovers in the fridge. And here it is, my masterpiece in 20 minutes! An appetizer stuffed mini peppers that I want to cook again and again!
Cut peppers in half lengthwise, keeping the stem intact. Remove the veins and seeds.
Finely chop the chicken breast and fry it together with chopped bacon until golden brown.
Combine cream cheese, plain yogurt, ranch dressing, chopped sun-dried tomatoes, fried chicken and bacon, and green onions in a bowl. Mix well.
Spoon mixture into each pepper. but filling should not be above the edges of the pepper.
Place stuffed peppers in the air fryer basket and bake for 10 minutes. Remove from the air fryer, let it cool a little, garnish with chopped cilantro and serve.
