These healthy vegan truffles with cacao nibs and mint have won my heart. They are very easy and quick to prepare, they contain only natural ingredients and are suitable for absolutely everyone. This healthy dessert is eaten with pleasure by children, truffles with cacao nibs are suitable for vegans and people with gluten intolerance. Sometimes ago I made these candies without using cacao nibs. Cacoa nibs have recently become an important part of my healthy recipes.Due to minimal processing of cacao nibs, they retain more nutrients than traditional cocoa powder. Cacao nibs contain natural antioxidants, magnesium, iron and fiber.Nowadays, whole foods have become the norm and can be purchased at almost any store or easily ordered online. Every time I buy dates for my recipes, I always buy cocoa nibs. This is the best combination that will create a chocolate bomb in just 5 minutes and improve the mood of any sweet tooth.
In a blender or food processor grind all ingredients together.
Divide into twelve balls. I used a small cookie scoop, and since they were sticky used another spoon to help me get the mixture out.
Refrigerate for 30 minutes to help set up.
Shape into balls, and roll in cocoa powder. Refrigerate until ready to eat. I think vegan cocoa nib truffles with mint had optimal flavor the next day as the mint really infused the truffle.
