Crispy chicken baked with alfredo sauce and mozzarella cheese is not only a very tasty food but also healthy, as it is cooked without oil in the air fryer. Of course this recipe can be cooked in the oven, but in the air fryer the chicken turns out very juicy on the inside and crispy on the outside.
Slice the chicken breast in half, but not lengthwise. Instead, cut it horizontally across the width to create two thinner pieces.
Add herbs, salt, olive oil for high temperature cooking and mix it well to ensure the spices evenly coat the chicken.
For the breading, combine the Panko and cornflakes with the Parmesan cheese. Bread the chicken breasts on all sides.
For homemade alfredo sauce add minced garlic to melted butter and fry until fragrant, add cream and simmer for a while over low heat, then add grated Parmesan and continue stirring until the cheese dissolves and the sauce becomes creamy, add salt and pepper to taste.
Preheat air fryer to 400F (200C) and bake chicken for 10-12 minutes until golden brown. Then top each chicken breast with 1 teaspoon alfredo sauce and shredded mozzarella cheese. Cook for another 2-3 minutes until the cheese is golden brown.
Before serving, sprinkle Air Fryer Baked Chicken Parmesan Alfredo with freshly chopped basil and serve with lettuce and cherry tomatoes.
