Stuffed Peppers Ingredients and Substitutions:
Chicken thighs – I prefer chicken thighs without the skin – they’re always juicy and flavorful, unlike chicken breasts, which can dry out.Any meat will work for this stuffed peppers easy recipe, but chicken and turkey will pair best with mango.
Mango – If you have fresh mango, great, use that, but frozen mango chunks will work well too.
Red onion and fresh garlic – Onions and garlic add flavor and aroma to fried chicken. Red onions have a less pungent smell and a milder taste. It can be replaced with shallots or even leeks. Fresh garlic can be substituted for dried, but fresh garlic produces a richer flavor when fried.
Cilantro – one of my favorite herbs is cilantro, I know there are people who don’t like it, I can’t imagine what can replace it, for me personally nothing. But if you don’t eat cilantro, try adding parsley instead!
Chinese Five spice powder – It is a traditional spice mixture used in Chinese cuisine to impart a distinctive aroma and flavour to dishes.You can buy it in a store or mix it yourself: Star anise – 1 teaspoon, cinnamon – 1 teaspoon, cloves – 1/2 teaspoon, fennel seeds – 1 teaspoon, Szechuan peppercorns – 1/2 teaspoon.
Orange – You will need orange juice and zest to enhance the tropical flavor of the filling. Zest the orange in the same way as the lemon, without touching the white layer under the orange peel.You can replace the orange with lime, it will also be very fresh.
Rice – I usually use boiled basmati rice, I really like its long fluffy grains, but you can use any other rice or even quinoa. What’s great about stuffed peppers is that you can often use up leftovers like quinoa or rice, salsa or beans, you can even add leftovers of finely chopped cabbage or cauliflower. And everything will be delicious.
Mozzarella cheese – I like to use fresh Mozzarella Cheese Galbani for this stuffed peppers chicken recipe, but sometimes I might add Cheddar cheese as well.

How to cook Stuffed Peppers Oven:
1.Preheat oven to 400F(200C). You also can cook this stuffed peppers in air fryer. Cut the peppers in half lengthwise and remove the seeds. Place pepper halves in a baking dish and drizzle with avocado oil. Bake for 20 min.
2.For the filling: cut the chicken legs into small pieces and fry in vegetable oil, add finely chopped onion, garlic, cook until the onion becomes transparent.
3.Add mango cubes, 5 spice Seasoning and ginger powder, lemon zest and juice. Cook for about 5 minutes. Season the mixture with salt and pepper and add the rice, cook for about 3 minutes.
4.Remove the pepper halves from the oven and load the filling. Sprinkle with shredded Mozzarella cheese and bake for another 10 minutes at 400F(200C) until the cheese is melted and golden brown.
5.Sprinkle the finished baked Stuffed peppers with finely chopped cilantro and hot pepper flakes, if desired.
