Bring a medium sized pot of heavily salted (like the ocean) water to a boil. Peel the sweet potatoes and cut into ½" cubes. Add the sweet potatoes to the boiling water and cook for about 7-8 minutes, or until tender. Keep an eye on them.
Drain and shake off excess moisture, or let air dry for a bit (only if doing this step ahead of time).
Cook the bacon in a large skillet over medium heat until nice and crispy. Set aside. Save the bacon grease in the pan (if there isn't much add a touch of another heat stable oil, you want the bottom of the pan coated).
Mix the apples with the seasonings.Add the sweet potatoes to the pan and spread out so they are in a single layer. Let cook undisturbed for a few minutes, until the bottoms become golden.
Meanwhile chop the bacon. Use a large spatula to scoop the sweet potatoes up and flip over to brown the other side.
Add the apples and bacon on top. Continue to brown, stirring only every few minutes until the sweet potatoes have plenty of dark spots. (10-12 minutes total)
